We made Pasta with Greens, Olives and Feta for lunch. (Yes, the title of the recipe is wrong on gourmet.com.) We have so many vegetables we had to start getting rid of them asap!
A couple changes:
- used whole wheat rotelli instead of the penne
- I think we had less greens. Used broccoli rabe because that was what we had
- We only had a handful of olives. Would have been better with a bunch though.
- Added mushrooms – sauteed with a little of the garlic parsley lemon peel mixture. Added more garlic.
- Added red pepper flakes to taste.
It was pretty good!
